Flag us if we're wrong, but the question of whether or not you like stuffing (ahem, or cranberry sauce) seems to be the ultimate Thanksgiving controversy. However, even if you're not a fan, there are plenty of people who will gladly eat your serving for you (I volunteer as tribute), so chances are you might have to have a few delicious recipes up your sleeve at one point or another.
However, we're also living in an age where a lot of people are trying to avoid wheat, which can make pleasing a gluten-free crowd at the Thanksgiving table a tricky task, indeed. So, to cover you on both fronts, we rose to the task of selecting five of our favorites that we'll gladly eat two (or three) servings of this Thanksgiving. Healthy, easy, and yes, mouthwateringly tasty, keep reading for five gluten-free stuffing recipes that will knock the turkey-printed socks off your friends and family.
Vegan Cornbread Stuffing
Dana Shultz, the epic cooking wiz behind Minimalist Baker and the author of Minimalist Baker's Everyday Cooking ($24) knows a thing or two about deliciously healthy cooking. We're constantly stalking her site whenever we need some much needed meal motivation and as the fates would have it, she has multiple amazing stuffing recipes. One of which, she says, can be customized to be gluten-free. Plus, it's completely fool-proof. Simply sub her normal cornbread recipe the instructions call for, in favor of this one instead. Other star ingredients include mouthwatering fare like cranberries, onion, and chopped nuts like pecans or walnuts. Bon appetit!
Zucchini Cornbread Stuffing
Holistic nutritionist and lifestyle cleanse expert Elissa Goodman is one of our favorite health and wellness gurus, especially when it comes to her website, which provides a font of expert information and delicious recipe adaptations, to boot. For instance, this gluten-free zucchini rendition of traditional Thanksgiving stuffing packs in all the same flavor you crave without the symptomatic impact of gluten. Filled with zucchini, celery, and carrots, a helping of this stuffing could also provide your turkey day veggie quota.
Cornbread sausage stuffing with leeks, pecans, and cranberries
The brilliant brainchild of blogger, food stylist, and recipe developer (she does it all) Lindsey Johnson, this gluten-free stuffing recipe is chock-full of all the good stuff: leeks, pecans, dried cranberries, and sausage. Use your favorite gluten-free flour for the cornbread or abide by her easy mix of brown or white rice flour, sorghum flour, tapioca starch, and xantham gum.
Simple Beauty Detox Stuffing
With a fresh, holistic approach to wellness, Kimberly Snyder is an expert when it comes to all things nutrition. In this helpful post, she provides a handful of delicious, healthy alternatives to all of your Thanksgiving favorites. We're partial to this gluten-stuffing recipe that you can make one of two ways: with either quinoa and an egg substitute (for an extra kick of protein) or without for a more traditional, but still made-over, version of the side. (Or here's an idea: You could make two batches to try each.)
Easy Gluten-free stuffing
Not only is this stuffing mouthwateringly good, it's also so easy to make (never a bad thing when you're trying to juggle multiple dishes and make it to family or friends' homes on time.) From the lovely food wiz Taylor of Food Faith Fitness comes this gluten-free version of the dish with savory herbs and vegetables aplenty like parsley, sage, onion, celery, oh, and lots of garlic. (Exactly how we like it.)
